Oven Roasted Quail

My kids absolutely love this dish.

  • Step 1
    • Split quail in halves and season with salt, pepper, and evoo
    • Place skin side drown in deep dish pan and sear for about 4 minutes, then flip and repeat process
    • Remove quail and let rest
  • Step 2
    • In same pan toss in sliced carrots and blanched potatoes and begin to sauté` until softening begins
    • Add sliced onions and sauté` until both carrots and onions are golden and soft.
    • Add chopped garlic into center of pan with button and brown
    • Once garlic is brown add about 4oz. of chicken stock to deglaze the pan.
  • Step 3
    • Add quail back to dish skin side up, cover with rosemary and toss in pre-heated over set at 500 on roast for 5 minutes or until crust begins to form over vegetables.

Place pan on a heat pad in the center of the table and enjoy.
